Ingredients:
- 1 cup dry mung beans
- 1 cup dry brown or green lentils
- 1 medium onion, chopped
- 3 medium carrots, chopped
- 4 cups vegetable stock
- 1.5 tbsp cumin
- 1 tbsp tumeric
- 1 tbsp coriander
- 1 tsp chili powder
Preparation:
- Saute onion and carrots over medium heat for about 5-10 min
- Add spices and heat for a minute or two
- Add lentils, beans and stock to vegetables
- Bring to boil, and simmer for about 45 min
