Chia coconut pudding

This is a super quick, easy and exceptionally tasty pudding. You can make it sweet or sugar-free. Consider this version to be only an example of what you can with the ingredients.

There are unlimited number of fruit and nut blends you can use and do not be afraid to experiment with coconut flakes, flavor essences or spices.

Ingredients:

  • 1 can (400ml) of coconut milk (no sugar added, full fat)
  • 1 cup of raspberries
  • 1/4 cup black chia seeds
  • 1/4 cup maple syrup

Preparation:

  • Blend all in a bowl
  • Refrigerate for several hours until set
